K, I just LOVE coffee. I always drink way too much. You know how you have a friend that you always send cute dog memes to? I’m the friend you send coffee memes to. Although I’m missing my delicious cup of joe from Magpie’s Kitchen, I’m saving a lot of money by making my own coffee at home! I still buy my beans from a local coffee shop though, I just finished off my JJ Bean beans from Magpies and I’m thinking I need some beans from Flatland Coffee Roasters from The Everyday Kitchen next!
One of my many gratitudes right now is having the time to try new things. As a coffee lover I had to try making my own version of this Dalgona Coffee everyone is posting. It was a TO DIE FOR! I made mine vegan, and a bit healthier by swapping the icing sugar for coconut sugar. I also tried two different options for a matcha version. The first was a flop, the second was delicious but the lack of frothiness limited my satisfaction! I’m going to tweak this and perfect it for you! For now, here’s the recipe for the one I’ve been making all week!
Servings: 2
• 2 TBSP Instant Coffee (I just used Tim Horton’s, but would love to try it with an Adaptogen Blend)
• 2 TBSP Coconut Sugar (I use this one)
• 2 TBSP Boiling Water
Iced Coffee
1. Using a hand or stand mixer (praise the Kitchenaid), whip together all ingredients on the fastest speed.
2. Fill a glass with ice and your favorite plant based mylk.
3. Top the glass with the whip.
4. Take a picture, and tag me on Instagram @xocadebabe cuz I need to see your masterpiece.
5. Mix it up, and enjoy!
Hot Coffee
1. Using a hand or stand mixer (praise the Kitchenaid), whip together all ingredients on the fastest speed.
2. Steam or heat up your favorite plant-based mylk on the stove.
3. Pour into your fav coffee mug, and top the glass with the whip.
4. Drink up #cadebabe, it’s gonna be a great day!
HOT TIP: I like to steam my mylk with a bit of Silk Hazelnut Coffee Creamer, it’s delightful!
